Hi, it has been many years since I used Litchi and I want to be sure I have the latest firmware before using with my Air 2S. The version showing on my iPad is 2.15.7

You have the most current version of the Litchi app.
Just to be clear, Litchi is an app (or software). Firmware is created by DJI and is loaded into the drone and the controller.
